½ English cucumber, cut into 4 long thin strips and seeds removed
½ cupfinely diced red bell pepper(about ½ small red pepper)
½ cupcoarsely grated or finely diced carrot(about 1 carrot)
½ cupfinely chopped broccoli
Instructions
In a medium sized mixing bowl, mix together cream cheese, chives, dill, parsley, black pepper, onion powder, and garlic powder until well combined.
1 container (8 ounces) plain spreadable cream cheese, 1 teaspoon dried chives, ½ teaspoon dried dill, ½ teaspoon dried parsley flakes, ½ teaspoon coarse ground black pepper, ¼ teaspoon onion powder, ¼ teaspoon garlic powder
Spread one fourth of this mixture onto one tortilla in an even layer, all the way to the edges. Repeat on remaining 3 wraps.
4 large flour tortillas
Place 1 cucumber strip on one end of the tortilla, and then sprinkle one fourth of each of the vegetables evenly over cream cheese. Repeat for each roll.

Tightly roll up tortillas with the filling on the inside. Wrap each roll individually in plastic wrap. Repeat until all 4 tortillas are filled, rolled, and wrapped in plastic.
Place roll ups in the refrigerator, and chill for at least 1 hour. Remove plastic wrap and slice each tortilla roll up into pinwheels about a half inch thick, about 8 slices depending on the size of your tortillas.

Pro tip: Chop your vegetables VERY small for best results. It will be easier to roll up the tortillas and they will hold together better.
Cream cheese spread: For a shortcut, buy flavored cream cheese and skip all the seasonings. I like chive & onion, or garlic & herb. You could also substitute an 8 ounce block of cream cheese for the spreadable cream cheese. Let it soften on the counter for an hour before you make the spread.
Variations: There are many types of flour tortillas you can choose from, including whole wheat. Choose which vegetables you want to include. Avoid juicy vegetables such as tomatoes which tend to make the roll up soggy.
